Vegetarian Taco Pasta

So I found this post on IG and thought I saved it but when I went to make the pasta I couldn't find the original post. So unfortunately I cant give any inspo credit and I had to wing the recipe. Thankfully its basic ingredients and it turned out better than I thought it would. Part of the fun with cooking, is finding a recipe and making it your own. I meal prepped with this and ate every last bit of it. Its very filling and each day I changed up my topping so it never got boring. I will defiantly make this again!

Ingredients:
8oz pasta of choice, I used banza rotini style
1tbs oil of choice
1/2 of a medium onion
1/2 green pepper
1/4 salt but it needed a little more so every day I just added a pinch while reheating
3 cloves garlic minced
taco seasoning (probably the way to go, I just winged it with the spices) or 1tbs chili powder, 2tsp cumin, 1tsp dry oregano
10oz can diced tomatoes with green chilies
15oz black beans, drained & rinsed
1/2 cup sour cream
1/4 cup cilantro
shredded cheese, sour cream, cilantro and any other toppings you like

Directions:
put water to boil for pasta
cut up onion, pepper and mince the garlic
add onion and pepper to heated oil, stir and wait until soft to add garlic
drain and rinse beans, add to pot
add can of tomatoes
next add all spices and give a stir
once pasta is done reserve 1/2 cup of the water and drain pasta, add to pot
add 1/2 cup of the sour cream and the reserved water, give it a good stir
add cilantro
now you can add your cheese to pot or wait and add to each individual serving that part is up to you
stir and let cook until all ingredients are hot
once its hot, its ready to eat, add whatever toppings you enjoy and that's it!! Super Easy!!
