Easy Vegetarian Tomato Pasta

This recipe was kinda on a whim, I had a bunch of tomatoes that where going soft, not bad but not salad quality if ya know what I mean. I looked in the pantry to see what I could make and well here we are. It was super easy, quick and delicious. The ingredients are simple and inexpensive.

Ingredients:
1 tbsp oil of choice, I used avocado oil
1/2 lb pasta of choice, I love penne
10 oz cherry tomatoes
2 cloves garlic, minced
2 tbsp tomato paste
1 cup heavy cream
1/2 cup parmesan cheese +++ extra for topping

Directions:
Cook 1/2 lb pasta until al dente in salted water.
Add 1 tbsp of oil to a pan on medium heat with 10oz cherry tomatoes & the two cloves minced garlic.
Cook until tomatoes are tender and then smush them with a spoon and cook for a few more minutes.
Add 2 tbsp of tomato paste and mix.
Add 1 cup of heavy cream and mix well. When simmering, season your sauce. I used salt, pepper, Italian seasoning and a dash of garlic, but you can use whatever you like
Add cooked pasta and 1/2 cup parmesan cheese with a dash of pasta water.
Cook together for a few minutes & enjoy!
Serve with salad and your favorite bread.
