Vegan Pumpkin Donuts


This is a recipe I have wanted to try for probably a year now, I have been wanting a donut mold forever and have just been to lazy to get one. After Christmas we went to Walmart and they had all their holiday stuff on clearance and one thing I got was a donut kit with the donut mold included for 3.50$ so of course I bought it. I couldn't wait to dig out this recipe and try it!! I made these for my breakfast meal-prep but my son has fallen in love and ate most of them (hahaha) I cant blame him because they are fantastic.



Ingredients: 

  • 15 ounce can pumpkin puree

  • 1/3 cup melted vegan butter

  • 1/2 cup soy or almond milk, unsweetened

  • 1 1/4 cups brown sugar, lightly packed

  • 1 3/4 cups all purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 teaspoons pumpkin spice

  • Optional ad ins: 1 cup non-dairy chocolate chips, raisins, cranberries or chopped walnuts (I added chocolate to the last batch)


Instructions:

  1.  Preheat the oven to 375 degrees F and lightly grease donut mold if needed, mine is silicone and doesnt need that.

  2. In a large mixing bowl, add the pumpkin, melted vegan butter, non-dairy milk and brown sugar. Whisk until well combined and smooth.

  3. Sift the flour, baking powder, salt and spices over the wet mixture. Mix the dry ingredients into the wet gently using a large wooden spoon until just combined, being careful not to over mix.

  4. Fold in any optional ingredients, if using, and fill the donut mold.

  5. Bake for 22-25 minutes, until a toothpick inserted in the middle comes out clean.
