The Best Chickpea Pasta Salad Ever!!


So Im about to share with you my most favorite new salad!! I was inspired by a recipe in Delish magazine but because I dont eat meat I changed it to make it vegetarian. I was not sure how this was going to turn out but it was sooooo good. I promise you will not be disappointed!! The ingredients are simple and interchangeable. This is great for meal prep, a side for dinner and most defiantly a gathering.








Ingredients For Dressing:

  • 1/4 c. extra-virgin olive oil

  • 1/4 c. apple cider vinegar

  • 1/2 tsp. Italian seasoning

  • 1 clove garlic, minced

  • 1 tbsp. Dijon mustard

  • Red pepper flakes

  • Kosher salt

  • Freshly ground black pepper




For Salad:

  • 1 (15.5-oz) can of chickpeas, rinsed and drained

  • 1 c. artichoke hearts, drained and quartered

  • 1 1/2 cup pasta of choice

  • mozzarella of choice I used the pearls

  • 1/2 c. grape tomatoes, halved

  • 1/4 c. sliced black olives

  • 1/4 red onion, thinly sliced




Directions:



  • Step 1- In a large bowl, whisk together oil, vinegar, Italian seasoning, garlic, and mustard. Season to taste with red pepper flakes, salt, and black pepper.


  • Step 2- Combine all salad ingredients in bowl and toss until coated in dressing. Season with more salt and pepper if desired.

You can add whatever veggies you like to this and it will taste great, I have already made this twice in the past month (haha). I have a reel on IG if your interested in seeing this recipe in action.
