So I made this soup a few weeks ago and wanted to share the recipe with you. I can honestly say I did not think this would actually taste like Olive Gardens let alone be good. But it was so good, I ate it for dinner and lunch. So I found the recipe on Google and there are many to choose from but here is the one I used.
Ingredients:
1 lb. Italian sausages (use spicy to get that signature Olive Garden flavor)
4-6 russet potatoes, chopped
1 onion, chopped
1/4 c. REAL bacon pieces (optional)
2 Tbsp minced garlic (about 3-4 cloves)
32 oz. chicken broth
1 c. kale or Swiss chard, chopped
1 c. heavy whipping cream
2 Tbsp flour
Directions:
1. Brown sausage in a sauté pan.
2. Place sausage, chicken broth, garlic, potatoes and onion in slow cooker. Add just enough water to cover the vegetables and meat.
3. Cook on high 3-4 hours (low 5-6 hours) until potatoes are soft.
30 minutes before serving:
1. Mix flour into cream removing lumps.
2. Add cream, kale, and bacon to the crock pot, stir.
3. Cook on high 30 minutes or until broth thickens slightly.
Add salt, pepper, and cayenne to taste.
I will add that I did not cook in the crock pot/slow cooker, I made it right on the stove and let it cook for about 3 hours, once the potatoes are cooked you're good to go!
Simple to prepare and a easy go to, whether you make it in the morning to come home to or cook it on the stove, you will not be disappointed.
And if your KETO I have also made this low carb, instead of using potatoes use cauliflower and skip the flour all together.
