Buckeye (peanut butter balls) Recipe

So this is something I saw on one of the Dugger girls (dont judge me lol) IG page many years ago. Now you can pretty much find this recipe anywhere, it has been around forever, even when I was a kid my mom made these just minus the chocolate. You can cover the whole thing in chocolate or half like I do, its really up to you.

Ingredients:
1 cup peanut butter, smooth
5 tbsp unsalted butter (I use whatever I have handy)
2 cups powdered sugar
1 tsp vanilla
2 cups semisweet chocolate (again I use whatever I have)

Directions:
Cream the peanut butter and butter together with the vanilla extract.
Add powdered sugar and mix on low until combined. Scrape down bowl and mix again.
Pinch off tablespoon sized pieces and roll into balls. (I used a scooper so they were all the same size)
Transfer balls to a baking sheet and chill until firm. At least 20 minutes. (I usually put them in the freezer)

Melt chocolate in microwave safe dish
Use a skewer or toothpick to dip the peanut butter balls into the chocolate. Leave a bit of the peanut butter exposed for that signature buckeye pea look or cover the entire ball, totally up to you
Chill to allow the chocolate to firm up and enjoy. If you want to remove the holes left from the skewers, run a small knife or spatula over the tops. (I just used my finger)
