Blasamic Tomatoe and Garlic Brushetta Toast

So this recipe started out as a waste not kinda thing but ended up being one of my favorite snacks. I have been trying to eat vegetarian/vegan/plant based for a while now but sometimes I cant (or don't) eat all the veggies before I give them to the chickens. So I had a thing of cherry tomatoes that were getting soft and didn't want to waste them, so I initially started out with the intent to make sauce for pasta but this was so much better! So to make this happy little accident you can use what's on hand like I did or grab a few things at the store. Now you can make as much or as little of this as you want, just adjust the recipe.

Ingredients:
a pint of cherry tomatoes (or two) halved
I used a half of French Baguette (if you do 2 pints of cherries you may need whole loaf)
3-4 garlic cloves (or more depending on your taste) I sliced them
1-2 tablespoons oil
1-2 tablespoons balsamic vinegar
1-2 teaspoons salt and pepper
shredded cheese, I used mozzarella

Directions:
stir and put on a baking sheet, I cooked them at 350 until soft
slice bread however you like it, top with tomato and garlic mixture, add cheese and broil until cheese is melted

As you can see this is really easy and you can adjust the ingredients as you like, I had this for dinner but it could be a snack, lunch or appetizer! I cant wait to make this again.
